The MentorU fee is 15% of what your customer is charged, after any discount. For one-time purchases, tax added on top of your price at checkout is not included. If your price already includes tax, the fee applies to the full price.

Your price is $100.00. $8.00 sales tax is added at checkout, so your customer pays $108.00. The MentorU fee is $15.00: 15% of $100.00. The tax is not included.

Your price is $100.00 including tax, and your customer pays $100.00. The MentorU fee is $15.00: 15% of the full $100.00.
Discount applied
Your price is $100.00 and a $20.00 discount applies, so your customer is charged $80.00 before any tax. The MentorU fee is $12.00: 15% of $80.00.
Memberships are billed by invoice: the fee is 15% of each invoice after any discount. MentorU does not add tax to membership invoices; if tax is added to them in your Stripe account, the fee includes it. Done-for-you launches use their first-year rate on the same basis. Stripe's card processing fees are separate. The Provider Agreement sets out the full terms.
